This is text book comfort food for a cosy night in - we've matched a hearty veal sausage cassoulet with a delicious pinot noir in this Winter Banger.
For 4 serves, you will need:
- 6 x veal and lemon sausages
- 1 onion, chopped
- 2 cloves garlic, crushed
- 400g tin cherry tomatoes
- 1 Tbsp balsamic vinegar
- 2 Tbsp chopped thyme
- 1 Tbsp lemon zest
- 400g tin butter beans
- Bread to serve
To make:
- In a heated pan brown the sausages, then set aside.
- Warm the oil in a large pan. Cook the onion and garlic until softened. Add the tomatoes, vinegar, thyme, zest and butter beans bringing to a simmer. Add in the sausages. Place into the oven for 30 minutes until cooked through.
- Serve with warm crusty bread.
