With lemons now in season, make your own lemon curd and whip up a fancy afternoon tea complete with scones and bubbles!

1. Beat 100g unsalted butter and 200g golden caster sugar together until they’re light and fluffy.

2. Beat in zest of 4 large lemons, followed by 3 beaten eggs and lemon juice.

3. Tip everything into a pan on low heat, stir until the mixture thickens.

4. Cool completely and enjoy on a warm scone.
